Michael Lublin and Christopher David, founders of Tosto Quickfire Pizza Pasta, didn’t want to run a fast food joint or another fine-dining establishment. The solution? “We decided that we’re going to take a fine-dining product, and we’re going to create it, develop it, cook it and serve it in a fast-food environment at a fast-food price,” says Lublin, the new chain’s VP. Chef Nicholas Wong—winner of Chopped: Canada’s first season—helped develop dishes, resulting in a menu of pizzas, pastas, antipasti, sandwiches, and salads featuring specialty ingredients like nduja, an imported Italian sausage. Meanwhile, Tosto’s Parent company, MTY Food Group, owns about 3,000 restaurants, so it can buy ingredients in bulk, keeping prices affordable: a pizza for two costs $10 to $15. And don’t worry about the tip. Customers get a buzzer signalling when a meal’s ready at the bar. “If the service is bad, you can only blame yourself,” laughs Lublin.
